Ingredients:
1 cup peanut butter
3/4 cup honey
2 cups flax meal (ground flax seed) Bob’s Red Mill
Dash Salt
Directions:
Mix peanut butter, salt and honey. Add 1 cup flax meal and stir into mixture. Slowly add second cup flax meal until stirred in well. Spray cookie sheet with oil. Drop dough by teaspoon. Bake at 300 degrees for 20 minutes. Makes 24 to 36 cookies depending on size.

Two cookies give you approximately 2T of flax – your daily allowance!

I started these cookies and I felt they were quite dry and I didn’t like all of that honey for diabetic. So I replaced about half of honey with art. sweetner, then decided to add some baking powder and an egg and I had saved a couple of the original to try both and cooked them with the rest of the batch as altered. The original were very crumbly and dry, but the ones with the BP and egg added were terrific, I didn’t add any oil because Flax has quite a bit. I absolutely loved them. I also took unsalted peanuts and just broke them up in my Magic Bullet and added some peanut butter to that so it would be crispy. I do love the cookies, so play around a bit with them and try them out.
